Feeling A Little Cheesy

I don’t eat a lot of cheese anymore. When I first started cutting calories I kept some light Kraft singles around in case I had a cheese craving. Cheese was something that I thought I would be miserable without but actually haven’t missed. Many times after I serve dinner I realize that I have forgotten to add cheese on top of tacos or pastas. And, in most cases when I do add the cheese I can’t taste it anyway amongst all the other flavors I achieve through calorie free spices.

I’ve been able to recreate most recipes without cheese or with minimal cheese. I even made a pan of lasagna with only 6 ounces of cheese by replacing the ricotta with blended, seasoned tofu. But, the one thing I crave that I can’t recreate without cheese is nachos. I love homemade, crappy nachos. Specifically I like to layer a plate with tortilla chips or Doritos and then pile on sharp cheddar, nuke it for a bit then top with black olives and picante sauce. I’m drooling right now just thinking about it.

What foods are you missing the most? Maybe I can help with recipes to replace them.

Damn! Now I have a wicked craving for nachos.

Quesadillas are my weakness….

Eek yah quesadillas are hard. The tortilla alone is close to 400 calories, not to mention the cheese! Not sure there’s a good substitute for that one either!
